Cherry Pie Fritters

Makes 4-8 Servings


Ingredients:

1 Carton Drake's® Cakes Cherry Fruit Pies
1 Cup All-Purpose Flour

1 Teaspoon Ground Cinnamon

1/4 Teaspoons Salt

2 Teaspoons Baking Powder

1/4 Teaspoons Nutmeg

1 Tablespoon Granulated Sugar

2 Large Eggs

1/3 Cup Milk

1 Tablespoon Butter, melted

1 Teaspoon Vanilla Extract

Vegetable Oil for Frying

Powdered Sugar, topping


Supplies:

Large Stock Pot, Dutch Oven or Deep Fryer

Directions:

  1. Unwrap each Cherry Fruit Pie and cut into bite-sized pieces. Set to the side.
  2. In a large bowl, whisk eggs. Add milk, vanilla, cooled melted butter and whisk together until combined.
  3. In a medium bowl, combine flour, sugar, baking powder, cinnamon, salt and nutmeg.
  4. Add dry ingredients to wet and mix until a loose dough is formed. Fold in cherry pie pieces.
  5. Fill frying pan with 3-4 cups of vegetable oil. Heat oil over medium, until it reaches 375-degrees.
  6. Use measuring cup to drop batter into oil, 1/4 or 1/3 cup at a time.
  7. Fry each fritter until golden brown on both sides, for a total of 4-5 minutes each.
  8. Use slotted spoon to transfer to paper towel-lined cooling rack.
  9. Repeat steps 6-8 until all batter is used.
  10. Sprinkle fritters with powdered sugar before enjoying!
